Zucchini & Squash Marinara over Whole Wheat Pasta
Ingredients
- 2 diced tomatoes
- 2 zuchini (unpeeled and diced)
- 2 squash (unpeeled and diced)
- 1/4 cup olive oil
- 1 (15 oz.) jar of marinara sauce
- 1 clove garlic
- 1/4 tspn. basil leaves, chopped
- 1/8 tspn. dired oregano
- 1 cup (4 oz.)shredded monterey jack cheese
- 6 cups cooked whole wheat pasta (1 cup per serving)
- 4 oz. chicken breast (optional)
Directions
- Saute zucchini and squash in 3 tbsp. olive oil until lightly browned and drain.
- Combine marinara sauce, diced tomatoes, remaining oil, garlic, basil and oregano in a small saucepan, stir well
- Simmer for 15 minutes, stirring occasionally
- Add zucchini and squash, mix well
- Sprinkle cheese over sauce
- Serve over whole wheat pasta
- If desired, place sliced grilled chicken over dish.
