Chive Spread
- ¼ Greek Yogurt
- 1 Table Spoon finely chopped chives
- Salt and pepper to taste
Avocado Salad
- 1 avocado (peeled, pitted, and diced)
- 1 tomato (cored and chopped)
- 1 cucumber (peeled, seeded, and diced)
- Squeeze of lime juice
- 2 tablespoons chopped fresh basil or cilantro
- Salt and pepper to taste
- 4 slices of whole grain bread or 3 small multigrain tortillas
- ¼ Alfalfa sprouts (optional)
- 2 slices of pepper jack cheese
Preparation*
- Chive Spread: In a small bowl, mix Greek yogurt and chives. Season with salt and pepper. Set aside.
- Avocado salad: In a medium bowl, gently toss together the avocado, tomato, and cucumber, lime juice, and basil/cilantro. Season with salt and pepper. Set aside.
- Assemble: Spread the chive-yogurt mixture on both slices of bread or tortillas. If using alfalfa sprouts, divide between bread/ tortillas. Top with avocado salad and cheese. Cover with remaining bread slice or if using tortilla, roll it up. Next step, enjoy!
