Bruschetta Salad
Ingredients
- 2 lbs fesh Roma tomatoes (4-6)
- 1/2 fresh onion
- 4 cloves fresh garlic
- 1 bunch fresh basil
- 4 tbsp. extra virgin olive oil
- 1/2 tsp. red pepper flakes
- 1 chicken breast (4 oz.)
- 2 cups Spring Mix lettuce
Directions
Combine ingredients (tomatoes – red pepper flakes) and set aside. Prepare chicken however you would like, then cut into strips. In a separate bowl, place lettuce on bottom then top with bruschetta mixture and chicken. Enjoy!
