California Sandwich To Go Recipe

 

Chive Spread

  • ¼ Greek Yogurt

  • 1 Table Spoon finely chopped chives

  • Salt and pepper to taste

 

Avocado Salad

  • 1 avocado (peeled, pitted, and diced)

  • 1 tomato (cored and chopped)

  • 1 cucumber (peeled, seeded, and diced)

  • Squeeze of lime juice

  • 2 tablespoons chopped fresh basil or cilantro

  • Salt and pepper to taste

  • 4 slices of whole grain bread or 3 small multigrain tortillas

  • ¼ Alfalfa sprouts (optional)

  • 2 slices of pepper jack cheese

 

Preparation*

  • Chive Spread: In a small bowl, mix Greek yogurt and chives. Season with salt and pepper. Set aside.

  • Avocado salad: In a medium bowl, gently toss together the avocado, tomato, and cucumber, lime juice, and basil/cilantro. Season with salt and pepper. Set aside.

  • Assemble: Spread the chive-yogurt mixture on both slices of bread or tortillas. If using alfalfa sprouts, divide between bread/ tortillas. Top with avocado salad and cheese. Cover with remaining bread slice or if using tortilla, roll it up. Next step, enjoy!
