Bruschetta Salad

Ingredients

  • 2 lbs fesh Roma tomatoes (4-6)
  • 1/2 fresh onion
  • 4 cloves fresh garlic
  • 1 bunch fresh basil
  • 4 tbsp. extra virgin olive oil
  • 1/2 tsp. red pepper flakes
  • 1 chicken breast (4 oz.)
  • 2 cups Spring Mix lettuce


Directions
Combine ingredients (tomatoes - red pepper flakes) and set aside. Prepare chicken however you would like, then cut into strips. In a separate bowl, place lettuce on bottom then top with bruschetta mixture and chicken. Enjoy!
